Adobo Fried Chicken Recipe

Last month, actress Gwyneth Paltrow made her version of Adobo. She made it fried and paired with a waffle.

I got inspired with her recipe and created my own. Her’s was simple just a combination of vinegar, bay leaves, garlic, sugar, soy sauce, salt, pepper flakes, and pepper corn. Based on the recipe, I can say that she didn’t cook the chicken well.

Mine is cooking the thoroughly with resulting in a sweet and thick soup. Covered with breading, bread crumbs and deep fried and have prepared it for my family of 10 members.

Ingredients for Adobo:

  •  1 1/2 kilo chicken – chopped
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 2 tablespoon white sugar
  • 5 cloves garlic – miched
  • 1 medium onion – chopped
  • Bay leaves
  • pepper

Ingredients for frying:

  • Chicken breading
  • Bread crumbs
  • Oil

Procedure:

  1. Put all “ingredient for Adobo” in a pan and put over a high fire until boil.
  2. When the mixture thickens, remove from fire.
  3. Remove the chicken from the mixture. This must be free from substances like pieces of onions and let it cool.
  4. Cover with chicken breading and let the mixture absorb it. This will result into a wet breading covering the chicken.
  5. Roll into bread crumbs.
  6. Fry until golden brown.
  7. Serve and enjoy.

Please be noted that frying should only take for about 2-3 minutes to avoid overcooked chicken.
