Crispy Tawilis With Spicy Vinegar Sauce

For those who don’t know, tawilis or sardinella tawilis is a fish that is endemic in the Philippines. It is specifically found in Taal Lake in Batangas. So, we are the only beings in this world who can enjoy tuyo.

The tuyo are adult tawilis. There are also young ones that are caught and it’s best for deep fried. We simple call it crispy tawilis.

This recipe of mine features no breading. We will just clean and season the tawilis, dunk them in the hot oil and serve. I will also include a sweet and sour dipping sauce.

Ingredients for tawilis:

  • Young tawilis
  • Oil
  • Salt and pepper

Ingredients for sauce:

  • 1/2 cup vinegar
  • 1 tablespoon brown sugar
  • A few drops of soy sauce
  • 1 medium onion – chopped
  • 1/2 teaspoon roasted garlic
  • 1 teaspoon chili flakes
  • salt and pepper

Procedure (crispy tawilis):

  1. Clean the young tawilis. No need to remove the innards.
  2. Set them aside in a strainer to remove the excess water.
  3. Season with salt and pepper.
  4. Deep fry until crunchy.

Procedure (dipping sauce):

  1. Combine all the ingredients. Mix well.
  2. Serve with crispy tawilis.
  3. enjoy.

The best thing about this is that you can refry them the next day. You can also use some of the oil for fried rice.
