Gabi Pudding – A Delicious Vegetable Dessert

I have been trying my best to create some dish that can trick my nieces to eat healthy vegetables. I am a little successful in making them eat some through Siomai, which has carrots, potatoes and turnips, Vegetable Tempura which has horse radish, carrots, and bell pepper and many more dishes. Here is anther recipe that features Gabi or Taro as the main ingredients. This is actually a dessert. I came up with this recipe using Pichi-Pichi as my inspiration. This comes from grated gabi or taro add with some ingredients to become sweeter, creamy and pudding-like.
- 1 cup grated gabi (2 medium sized)
- 168 ml condensed milk (1 can)
- 1 cup rich coconut milk
- 1/4 cup white sugar
- 2 eggs
- 1 spoon flour
- Dilute the sugar in coconut milk.
- Mix all other ingredients and put into a pan.
- Steam for 1 hour
One of my sister was clueless that it was gabi, she thought it was purple yam.
