Looking for a shrimp recipe for this cold weather? Well, try this sinigang na hipon sa kamias recipe.

Shrimps, though considered scavengers of the ocean floor, are well-loved. We all crave for them and will never hesitate to buy even though they are pricey.

Since we love them, we can provide hundreds of ways to cook them.

Buttered shrimp is definitely the most popular way to cook shrimps. Allow me to say this because it’s the simplest way and the butter releases flavor of the shrimp, making it more sumptuous.

However, during this colder weather, we also loved them cooked with a broth. Hence, we love to cook sinigang na hipon. This specific recipe will use kamias or the fruit of a cucumber tree to make the soup sour.

Ingredients

1 kilo shrimp – cleaned

10 pieces kamias – cleaned and chopped

5 pieces medium tomatoes – chopped

5 cloves garlic – minced

1 medium red onion – chopped

1 tablespoon chopped ginger

A bundle of pechay – remove the bottom part

6 cups water

Oil

Salt and pepper to taste

Procedure

In a pan, saute garlic, onion, and ginger. Let them roast to release the flavor.

Add the tomatoes and let it simmer.

Add the water and let it boil.

Put the kamias and let it boil until the soup becomes cloudy.

Season with salt and pepper.

Add the shrimp and boil until cooked.

Top the pechay and boil for 30 seconds.

Cover the pan and let it sit for about a minute,

Serve and enjoy.

Notes

To clean the shrimp, you should cut the antenna first. Then, let the water from the faucet run while running it with your fingers.

When seasoning with salt and pepper, make it a little blander compared to your preferences. The water will soon evaporate when you cook the kamias and shrimp.

If pechay is not available, kangkong stalks will suffice.

This sinigang na hipon sa kamias is best served with hot rice.

Okoy or crispy shrimp fritters are like hamburger patties. However, instead of using ground beef or pork, you will use tiny shrimp (alamang). When cooked, this is crunchy, flavorful, and tasty.

It is claimed that Laguna started this dish as a snack, but as time goes by Filipinos prefer to eat this as the main course.

Read: Buttered Shrimp Recipe

There are also recipes using peeled and chopped medium shrimps, but this recipe will use the small shrimps and some vegetables.

Ingredients

1/2 kilo raw small shrimps (alamang)

1 cup all-purpose flour

2 eggs

1 medium carrots – grated

1 medium potato – grated

2 medium onions – finely chopped

5 cloves garlic – finely minced

spring onion – chopped

ground pepper

salt

seasonings

oil for frying

Procedure

Wash the shrimp, drain in a huge bowl form it like a volcano.

Put all the ingredients in the center. Then, try to mix them well first before mixing them with the shrimp.

Fry about two tablespoons of the mixture on a heated pan over a medium fire.

Remove when crispy.

Serve and enjoy.

Notes:

This dish is somehow tricky. You must fry it long enough to achieve that crispy texture but not letting it burn.

You can remove excess oil by using a tissue.

If you are not using a non-stick pan, you must preheat it before putting the oil. This will prevent the okoy from sticking.

How to cook okoy with a twist? You can also add other vegetables like green papaya, and togue to add flavor and chewing experience.

I love string beans… the crunchy skin, sweet kicks, and chewy texture of the seeds are something I used to enjoy. I won’t back down in eating them even if it’s just cooked the most simple way.

Simple as it may seem, cooking string beans by just sauteeing them is already a dish to die for. What more if we’ll add pork and shrimp? It’s divine. The flavors of the pork and shrimp go well with the sweetness of the string beans. The herbs? Fantastic!

Read: Ginataang Hipon at Papaya

How to Properly Clean a Shrimp?

Strands of antennas in a plate of shrimp are unappetizing. So, as much as possible, remove them all. You can use a pair of scissors in doing so. After, you must remove the slimy coatings of the shrimp by running them on water, using your fingers to scrub the body.

Cleaning the shrimp properly may take time. However, it’s super worthy.

Ingredients

1/2 kilo pork – chopped

2 bundles stringed beans – remove the bottom part and slice (2 1/2 inches each)

1/4 kilo shrimp – washed and antenna removed

4 pieces tomatoes – chopped

1 thumb size ginger – chopped

4 cloves garlic – finely minced

1 medium onion – chopped

Salt and Pepper to taste

7 cups water

1 tablespoon oil

Procedure

Saute garlic and onions.

Add the tomatoes and let it simmer.

Add the ginger, pork, and water and let it boil for 10 minutes.

Put the string beans and boil for 5 minutes.

Add the shrimp and boil for 3 minutes.

Add salt, pepper ad seasonings. Then, mix well.

Cover for about 10 minutes.

The Ginataang Hipon at Tulingan involves cooking the seafood in coconut milk.

Quezon Province is an awesome place to unwind. Though it’s quite an expensive tourist destination, it features serene and tranquil beaches that are perfect for people who want to relax.

There we did beach-hopping. Dampalitan, Kwebang Lampas, and Cagbalete Island are some of the wonderful places we visited.

Cagbalete is our last stop, and we stayed there for two days and one night. I’m actually disappointed by the place because when the afternoon hits, the tide is low and when we say low tide, Cagbalete means it. You are like walking in kilometers of flood and it’s not fun anymore.

Read: Sinigang na Bisugo at Hipon Recipe

When we were just waiting for our boat to arrive, one local went to us and offered us his freshly-caught seafood. When we checked his basket, there are shrimps and a piece of tulingan. He’s old so we just bought all his products.

When we got back home, I cooked them with coconut milk. Here is the Ginataang Hipon at Tulingan Recipe:

Ingredients:

1 kilo shrimp, cleaned

1/2 kilo tulingan, cleaned and sliced

2 cups coconut milk

1/2 cup water

2 pieces medium eggplant, sliced

2 green chilies

4 pieces medium tomatoes, chopped

4 cloves garlic, minced

1 medium red onion, chopped

1 knob ginger, sliced

oil

Salt and pepper to taste

Procedure:

In a pan saute onion.

Add the garlic and let it fry until aromatic.

Put in the tomatoes and a few drops of water. Let it simmer until the skin of tomatoes peels off.

Add the eggplant and let it simmer.

Put the coconut milk and remaining water. Bring into a boil.

Add the green chilies and bring into a boil.

Season with salt and pepper.

Add the shrimp and tulingan. Let it boil for a couple of minutes.

Remove from heat, cover, and let it rest.

Serve with hot rice.

Are you looking for a simple but delicious Buttered Shrimp Recipe? Well, read further.

A friend of mine updated her Facebook status posting an article about shrimp saying they are the cockroaches of the ocean. This is because the former scavenge and eat everything they encounter in the sea, which is equivalent to the activities of the latter.

My friend was disgusted because of the comparison. The article, somehow, pushed me to do a little research and it turned out that they are indeed somehow related. However, not quite!

While the two came from the same Phylum, which is arthropods, they are of different classes. Cockroaches are in the class Insecta and shrimp are in the class Crustacea.

Read: Sinigang na Bisugo at Hipon Recipe

It will also boiled down to a logical reasoning — cockroaches are pests while shrimp are food. In fact, delicious food and best when cooked with butter.

Here is the Buttered Shrimp Recipe.

Ingredients:

1/2 kilo shrimp, cleaned and remove the antenna

1/2 stick butter

2 cloves garlic, minced

1 medium onion, minced

salt and pepper to taste

Procedure:

In a pan, melt the butter under a low fire.

Saute the garlic until golden brown and then added the onion. Let the low fire running until the onion becomes translucent.

Put the pan over a high fire and then drop the shrimp. Once the shrimp changed their color, bring back the fire into low.

Cover the pan to build in pressure so the shrimp will cook faster.

Enjoy and set aside.
